Brown Bag Delights

Sending your children to school with wholesome brown bag lunches can help them maintain a healthy weight and provide them with the nutrition they need to be energized and ready to learn.

The Apple Tuna Sandwich is sweet and rich in fiber. The Honey-Mustard Turkey Sandwich offers a kid-friendly twist by substituting a yogurt/mustard spread for high-fat mayonnaise.

Apple Tuna Sandwich

2 6-oz. cans unsalted tuna in water, drained

1 medium apple chopped

1 celery stalk, peeled and chopped

1/4 cup low-fat vanilla yogurt

1 tsp. prepared mustard

1 tsp. honey

6 slices whole wheat bread

6 lettuce leaves

6 slices tomato

Combine and mix the tuna, apple, celery, yogurt, mustard, and honey. Spread ½ cup of the mixture on three bread slices. Top each slice of bread with lettuce, tomato and remaining bread. Cut sandwiches in half. Serves three.

Honey-Mustard Turkey Sandwich

2 tbsp. plain low-fat yogurt

4 tsp. honey mustard

4 slices multigrain bread

2 lettuce leaves

6 oz. sliced fat-free turkey breast

4 slices tomato

2 slices sweet yellow pepper

2 slices sweet onion

Combine yogurt and mustard. Spread onto bread slices. Top with lettuce, turkey, tomato, sweet pepper, and onion. Serves two.
